Fried Tamarind Potatoes

Ingredients

  • 4 large potatoes.peeled and cubed
  • 2 cloves garlic,peeled and minced
  • 3 cloves shallots.thinly sliced
  • 1 chilli
  • For Tamarind Sauce:
  • 1 tablespoon tamarind pulp(use 2 tablespoons lemon juice

  • 3 tablespoons fresh water
  • 2 tablespoons thick dark soy sauce
  • 1 tablespoon sugar
  • Method

    Step 1
    In a massive slippery cooking pan,preheat edible fat. Add cubed potatoes and fry till they Ate [*fr1] seared.
    Step 2
    Add minced garlic,shallots and chili. Continue change of state,stirring often,until the shallots have softened and therefore the potatoes have crisp edges.
    Step 3
    Just before serving pour in tamarind sauce (see formula below) and fry to coat potatoes equally. Serve deep-fried tamarind potatoes hot.
    Step 4
    Tamarind Sauce: in a very tiny bowl,combine all ingredients. combine well and pour over deep-fried potatoes.
