Sweet Potato Bread
Ingredients
3/4 cup

1/2 cup oil
2 eggs
1 cup mashed sweet potatoes
1 tsp vanilla
1/2 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
1 3/4 cup flour
In separate bowl, mix sugar, oil, eggs, sweet potatoes and vanilla.
Add wet ingredients to dry and blend till simply combined. it'll be thick.
Pour into lubricated loaf pan and bake for one hour at 350 or till knife inserted within the middle comes out clean.
